Tasting note
An aromatically perfectly clean rosé wine is always a testimony to careful selection and processing of the grapes. Not only excellent grapes (Garnaccha and Viura) were used for this Rioja Rosado. In fact, it is not a conventional rosado, but a saignée. This means that - as far as the Garnacha part is concerned - some of their juice is removed from the freshly crushed red grapes even before they can absorb the full colorants and extracts of the berry skins. After perfect clarification, the must obtained in this way is then fermented slowly and coolly together with the must from the white Viura grapes. The bouquet is correspondingly crystal clear, fresh, finely aromatic. The balance on the palate is excellent, lively acidity is well balanced with beautiful melting.
Culinary recommendation
This rosado is ideal as an aperitif and goes well with starters, salads, grilled prawns, olive tapenade or fish carpaccio.
Vinification
The grapes are harvested by hand. The rosé wine is produced using the saignée method, with the free-draining must having contact with the grape skins for around four hours. Fermentation is then carried out at a low temperature to preserve the freshness and aromatic intensity of the wine.
