About the wine

Even the Romans knew what great wines were produced here and in the 3rd century they built vineyards in the steep slate slopes that still exist today and a villa complex on the historic Van Volxem s winery. Today, Roman Niewodniczanski and his team build on this rich tradition. Aware of the uniqueness of their history and locations combined with the necessary innovative spirit, they create wines from vines, some of which are over 120 years old, which are unrivalled in terms of excitement and expression. With their pure, precise handwork, a return to traditional craftsmanship and respect for the surrounding nature, that goosebumps are guaranteed!

Tasting note
Expressive and elegant like fireworks, yet quiet at first, cool as the dark night, almost inconspicuous, but once the fuse is ignited, there is no turning back, no holding back, first a bang, then enchanting, sparkling in all colors and aromas, unbelievably sweet, ripe pear, vineyard peach, bergamot and mandarin, very mineral in the form of a salty sea breeze, momentum after momentum, something new comes up again and again, including herbal, yeasty aromas of Sencha green tea, verveine, some smoke. A blast on the palate, all senses, all buds are on attack, you don't even know what's happening to you. All of a sudden, there is a calmness in this violence, a directness that shows you the way. A masterpiece without words.

Vinification
Very selective harvesting of fully ripe grapes by hand and further selection at the table in the cellar. Gentle pressing, spontaneous fermentation with the vineyard's own yeasts in wooden barrels and temperature-controlled steel tanks. Expansion in steel tanks. No additives or wine treatment agents.
