Vinification
A few words about vinification: Clemens Busch relies on particularly gentle vinification. After selective manual harvesting, slow spontaneous fermentation is started. The grapes ferment with the help of natural fine yeasts from the vineyard over a period of over ten months in some cases. The maturation takes place in the typical Moselle fuder barrels, which are made of oak wood.
