About the wine
At the beginning of 2000, the former monastery winery was acquired, restored and expanded by Roman Niewodniczanski. The aim of the very artisanal production of the wines is to preserve the characteristics of every vineyard location. The results are mostly dry-aged, mineral-rich wines with ripe fruit and low alcohol content Rieslings in the style of the famous Saar wines around 1900.

Vinification
The selected, late-picked grapes are gently pressed after manual harvesting and then spontaneously fermented in stainless steel tanks using wild yeasts. When stored on fine yeast in wooden barrels for eleven months, the wine gains additional complexity and creaminess. The wine is bottled without fining.
