About the wine
At the beginning of 2000, the former monastery winery was acquired, restored and expanded by Roman Niewodniczanski. The aim of the very artisanal production of the wines is to preserve the characteristics of every vineyard location. The result is predominantly dry-aged, mineral-rich wines with ripe fruit and low alcohol content. Rieslings in the style of the famous Saar wines around 1900.

Vinification
Low average yields and selective hand harvesting. The grapes are gently pressed and then spontaneously fermented in stainless steel tanks using wild yeasts. As a result of the long storage on fine yeast in wooden barrels, the wine gains additional complexity and creaminess. The wine is bottled without fining. All Van Volxem wines are vegan. No fining agents or wine treatment agents are used that have animal ingredients or are of animal origin.
