Tasting note
Straw yellow color with delicate green reflections. Bouquet: intense, fresh and sophisticated. Fine notes of white spring flowers, peonies and calla blossoms. It goes perfectly with the fruity notes of white cherry, strawberries and Renetta apple. Refreshing notes of citrus and thyme complete the bouquet. Taste: lively, dynamic and pleasantly mineral. Citrus notes of cedar and lime and lively acidity give a lasting feeling of freshness. Delicate but enveloping with a slightly balsamic aftertaste.
Vinification
The grapes are carefully destemmed and macerated for a short period of time. Next, the fruit is crushed until soft. The must obtained is then allowed to settle. The now clarified must ferments in temperature-controlled stainless steel tanks. After fermentation, the wine is stored on the yeast in the stainless steel tanks for six months. The bottled wine is stored in temperature-controlled storage cellars for at least two months.
