Tasting note
The Matarromera Reserva presents itself with an intense color. The nose is dominated by ripe black fruit aromas, accompanied by distinct mineral notes that are characteristic of calcareous soils. Light cocoa, spice and balsamic tones complete the aromatic experience. On the palate, there are first hints of dark chocolate, which gradually give way to fresh leather and a hint of pipe aroma. An exclusive wine that is undergoing remarkable development.
Culinary recommendation
Wonderful with beef — from steaks to stroganoff to tartare or slow-cooked roast from the oven. Wonderful accompaniment to all kinds of stews — whether it's lamb gigot, beef shoulder, roast pork or ossobuco.
Vinification
The Tempranillo grapes for Riserva are over 25 years old. Due to age, vegetative growth is significantly slowed down, which results in smaller panicles and grapes, but in higher quality. The calcareous soils at an altitude of over 750 meters also contribute to the excellent quality. Limestone soils allow good water drainage and produce full-bodied wines that are perfect for aging. Aging for 18 months in barriques and a further 18 months in bottle.
