Tasting note
In addition to Amarone, Recioto is certainly the showpiece of Rubinelli Vajol. The ruby red wine with light orange reflections beguils with its aroma potpourri of dried fruits, canned cherries, nutty notes, spices such as cinnamon or clove, slight oxidation tones and a pleasant residual sweetness. A wine for the best hours of the year or for a wonderful declaration of love. Unfortunately, this wine is only available in small bottles and only in very limited quantities

Culinary recommendation
A great meditation wine, also wonderful with ripe cheeses, hearty game dishes, chocolate or cake
Vinification
The grapes, selected with care, dry for 180 days in the in-house tuff drying cellar. The grapes are heavily dried and the aromas concentrated. The fermentation process then takes place at cool temperatures. After fermentation, the wine is aged in 50 hl oak barrels for approx. 18 months.
