Tasting note
Pale yellow with greenish reflections. Vivid, mineral-accented citrus and orchard fruits and blossoms on the nose, along with fennel and ginger accents that build up as the wine expands. Sharply focused and lively on the palate with intense Meyer lemon, pear-skin and honeysuckle aromas, underlined by a smoky minerality. Shows impressive energy and mineral thrust in the aftertaste, which lasts with power.
Culinary recommendation
Goes well with seafood, paella, pizza.
Vinification
The grapes are vinified individually in steel tanks, according to grape type and plot. After assemblage, bottle fermentation takes place in a horizontal position for 18 months. The date of “dégorgement” (removal of the fine yeast) is individually printed on each bottle.
