Tasting note
Dense ruby with violet reflections. An extremely complex and at the same time harmonious wine. The nose shows tobacco and licorice. Plus dried fruit aromas, cherry compote and some leather. Tannin present on the palate, almost sweet and not astringent. The aromas on the nose are repeated. A very rich wine that never loses its elegance. Intense and very long aftertaste.
Culinary recommendation
A meditation wine as it stands in the book. Fireplace recommended.
Vinification
The vineyards are located on a hill called Ravazzol. The age of the vines is between 50 and 70 years. Depending on the variety, the grapes are carefully selected in the vineyard and harvested by hand between the end of September and the end of October. After harvesting, the grapes are dried on so-called arelle until at least the end of January, as is usual in Amarone production. In the process, the grapes lose around 40 percent of their own weight. At the same time, sugar, aroma and extract are concentrated, giving the future wine a unique smell and taste as well as high density. After drying, the grapes are fermented at low temperatures in steel tanks. Fermentation starts spontaneously. No yeasts are added to this wine. After fermentation is complete, the young Amarone matures for eight years in 3,000 liter oak barrels.
