Tasting note
Sparkling golden yellow Rich fruit bouquet but also fragile spicy notes; hints of nutmeg, mandarin and candied exotic fruits. Lots of melting on the palate, orange peel and mango, the crisp acidity makes the wine surprising with a fresh finish.
Culinary recommendation
Enjoy the quintessence Passito as an accompaniment to various desserts or mature blue cheese.
Vinification
Harvest of fully ripe grapes, which are dried in boxes and pressed at 35° KMW in March of the following year; 100 kg of fresh grapes produce 18 l of must; fermentation lasting several weeks and storage on fine yeast in tonneau for 24 months.
