About the wine
One of the most renowned producers in the Loire. The Baumard family can be traced back to 1634. The history of the modern winery begins in 1955, when fantastic plots of Quarts de Chaume (which produces some of the best sweet wines in France) and Savennières (known for its racy white wine) could be purchased. Baumards always show a lot of elegance and filigree transparency and a crystal-clear fruit. To ensure that the fine nuances of Chenin grapes reach the bottle as unadulterated as possible, Florent Baumard refrains from aging in barriques.

Culinary recommendation
Goes well with mature soft cheese, foie gras, duck liver, desserts.
Vinification
The berries must be harvested when overripe and may be affected by noble rot, but they do not have to. Thereafter temperature-controlled cool fermentation, pneumatic gentle pressing; aging in steel tanks.
