About the wine

The winery was founded in the 1920s and has been family-owned ever since. Gino Fasoli, after whom the winery is also named - was allergic to the chemicals used in viticulture, which also gave reason to switch to organic and now biodynamic viticulture as early as the 1980s and thus far before many others. And so the family is serious not only to preserve nature, but also to create the best possible conditions for all employees and to pour customers pure wines. Today, the vineyards and the wines are bursting with life, and yet, like Tasi Prosecco, they have a bright, fresh, mineral straightness that is so invigorating and inspiring.

Tasting note
Back to the future - what a fast-paced ride, fast, clear, fresh, very bright fruit, apple and pear, bright, green tart and mineral freshness, just a whiff of light nut, and always something gentle, not a bumpy road. Rustles through the palate as an arrow, straight tart freshness, slightly green, just a gentle touch of mild fruit and nut, exciting, firm and invigorating, dry. Great! Forward out. Finally a prosecco that rocks tart instead of weighing itself to the sweet beat of fruit and dosage!
Culinary recommendation
Recommended by Flaschenpöstlern: Prosecco Tasi DOC goes perfectly with aperitifs, salmon patties and appetizers.
Vinification
Selective reading by hand. Cool, slow fermentation of the directly squeezed, fresh must with selected yeasts in steel tanks, followed by second fermentation for carbonic acid formation over approx. 2 months in a pressure tank (Méthode Charmat), aging on the yeast over 20 days.
