Tasting note
On the palate, this prosecco is wonderfully enveloping and juicy, with a delicate interplay of aromas reminiscent of white stone fruit. Its elegant freshness and balanced combination of fruit, acidity and fine sweetness make every sip a harmonious treat. The fine and persistent perlage helps to reinforce the fruity notes of apple and pear and gives the wine a lively structure. A touch of floral notes — wisteria and acacia flowers — perfectly rounds off the aromatic profile and provides an elegant aftertaste.
Culinary recommendation
This elegant prosecco is a wonderful accompaniment to white fish carpaccio, scallops with mashed potatoes or spring salads with prawns, asparagus and avocado. It also goes perfectly with light risotti made from fish or seasonal vegetables as well as with fresh pasta such as lasagnette.
Vinification
The grapes harvested by hand are carefully pressed to preserve the fine aromas. The must is then fermented with selected yeasts at a controlled temperature of 15 °C. The second fermentation takes place using the Charmat method at a temperature of 15°C, giving the prosecco its characteristic, fine and persistent perlage.
