Tasting note
Intense graphite surrounded by dark chocolate and black pepper spice, these intense aromas envelop black cherries and plums. On the palate, bands of juicy black and red cherries stretch across a fine-boned structure, the tannins, fine and soft, wrap around this density like silk. This hearty flavor draws plums and currants into the deep-fruited and peppery finish.
Culinary recommendation
Goes very well with hearty meat dishes with lamb, beef or game.
Vinification
The Proprietor's Blend is a blend of six grape varieties that are grown on the property. These vineyards grow on the warm, north-facing slopes of the Helderberg region within the Stellenbosch appellation. These special varieties thrive under these conditions and produce rich, full-bodied red wines. With an altitude of approx. 250 meters above sea level, together with the cooling influence of the Atlantic, the aging period can be extended, resulting in phenolic wines. The grapes are harvested by hand in the cool early morning. Whole berries are fermented in open tanks and barrels with intermittent pumping and cutting to ensure a balance between flavor, color and tannin extraction from the skins. All fermentations are meticulously monitored to ensure that all natural aromas and flavors are retained. After primary fermentation, some tanks are subjected to prolonged maceration. Each variety is aged separately in oak before final blending. Aged for 18 months in 300-liter French oak barrels (30% new ones).
