Tasting note
A single-varietal meunier of grapes from old vines, which come from two adjacent plots in “Mardeuil”, in the Vallée de la Marne: Les Carrés du Midi (1960) and Les Chataîgners (1954). 80% of the base wine is aged for seven months in steel tanks, 20% in 400 lt. Well, we don't use BSA. The basis is 90% of the 2020 vintage, plus 10% reserve wine from 2019. The champagne then rests on the yeast in the bottle for around 30 months before it is disgorged. The nose shows fresh aromas of red and white currants, clementines and blood oranges, underlined with notes of almond blossoms and a delicate chalk touch. Fine and elegant on the palate, with invigorating freshness.
Culinary recommendation
Goes well with fish and seafood, such as grilled sea bass with wild fennel, lemon risotto with crayfish or langoustines with orange hollandaise. But it also goes great with poultry or white meat.
