About the wine

In 2004, Dominik Huber and Eben Sadie started their Terroir al Limit project in Priory with the help of the Pérez family. Nothing else should be bottled but terroir, excellent locations, old vines, biodynamic management, spot fermentation, concrete and fuder instead of barrique. After only a few and also experimental years, Dominik has now explored the limits of the terroir more responsibly and implemented his vision. Terroir al Limit, these are beguiling wines, burgundy in the rock face, erotic black and white photographs, wines of exceptional elegance and mineral power. Very great wines!

Tasting note
Conservative thinker with a lyrical streak. Lots of peace and wisdom, delicate fruit, orange peel, quince, characterized by mature thoughts, oxidative notes, with the inner peace that only mature personalities have, wax, herbs, fennel seeds, but with the bitter life experience, bright minerality. On the palate with superior size and freshness, completely without haste and compulsion, sweet orange fruit, again more gentle, albeit powerful, with decisiveness, initially mild, then pronounced mineral freshness, salty, tart. Respectable personality, with quiet authority, wisdom and depth instead of youth and zeal! Great wine for a long life!
Culinary recommendation
The recommended enjoyment phase of this wine is in the following period: Now until 2020 Recommended by Flaschenpöstlern: Goes well with spicy food, spicy dishes and burgers with blue cheese.
Vinification
Very selective reading by hand. Gentle whole grape pressing with feet, fermented with the vineyard's own yeasts in cement tanks, aging for 8 months also in cement tanks. Pedro Ximenez is vinified separately and with slight oxidation before blending with Macabeo and Garnacha Blanca. Vinified with a lot of time and patience.
