Tasting note
Fairview is known for promoting this proud local grape and tells the story of Pinotage by proving the great heights that the variety can reach through Primo. Our award-winning Primo is bursting with ripe, dark fruits on the nose, elegant tannins and a long cigar box finish.
Culinary recommendation
Goes well with hearty meat dishes such as braised beef, lamb chops or game dishes. It is also an ideal accompaniment to spicy dishes, such as hearty mushroom ragout or eggplant lasagna. Its structure and depth also make it a suitable partner for aged cheeses such as cheddar or blue cheese.
Vinification
Fermentation took place in French oak fermenters with an open lid (foudre), and manual punch downs (pigeage) were carried out twice a day. After the alcoholic fermentation was complete, the wine was pressed in a basket and transferred to French oak barrels for malolactic fermentation, with 45% of the barrels consisting of new oak. The wine aged in oak barrels for a total of 22 months.
