Primitivo is one of the 10 most cultivated grape varieties in Italy. Primitivo Gioia del Colle from Terrecarsiche is cultivated on karst soil, which is rich in skeletal parts and iron. The climate is of course Mediterranean, characterized by mild and rainy winters and long and dry summers. After harvesting, the grapes are pressed. This is followed by a 15-day maceration. Fermentation then begins at a controlled temperature of 24°-26°C. After a slight filtration, the Fanova is aged in French oak barrels for about 3 months. As far as the possible combinations with dishes are concerned, the Fanova adapts very well to local specialities, barbecues, roasts and pot roasts without forgetting game dishes, pasta with ragù and fine pork sausages. The combination with vegetable soups, such as pasta and bean soup (pasta e fagioli), is also very interesting. Ultimately, this wine also goes well with spicy and well-stored cheeses. The recommended temperature for enjoying the wine should be between 18° and 20°C. Residual sugar 6.5 g/l.
