Tasting note
Attention natural wine lovers! Very untypical for the Loire, Nina and Jonathan Pabiot created Utopia, a wine in which the credo was to intervene as little as possible. After manual harvesting, the grapes were fermented intracellularly, i.e. without pressing or squeezing, in the grape skin and then aged in concrete eggs for 18 months with full yeast and trub. Certainly not a classic Pouilly Fumé, but it's definitely worth trying.
