Tasting note
Light yellow with soft green reflections, clear and brilliant. On the nose, floral and mineral notes, accompanied by exotic fruits and ripe apples. Full-bodied and fresh on the palate, with fine minerality and white flowers that blend into a rich finish. Balanced with crisp freshness, mineral depth and harmonious curves.
Vinification
The hand-picked grapes are gently processed with pneumatic presses before the must rests and is clarified for 12 hours. Fermentation begins spontaneously with wild yeasts in temperature-controlled cellars and takes place exclusively in 3 to 5-year-old barrels. Traditional burgundy vinification on yeast with batonnage gives the wine its richness and characteristic terroir aromas. Depending on the vintage, it undergoes malolactic fermentation. If necessary, the wine is gently clarified with bentonite and lightly filtered.
