This dominant red wine 2013 — Porcupine Ridge Cabernet Sauvignon is a triumph down to the last drop in the truest sense of the word! With sensitivity and intuition, the winemaker from the South African winery Porcupine Ridge masters this red wine in the beautiful and magnificent landscape of the coastal region. Tasting note
The nose is dark and intense with plenty of black berries, graphite and pencil aromas, a touch of dust and an attractive bouquet of fresh oregano, tarragon, sage and bay leaf. Blueberries, blackberries and ripe plums dominate the fresh, chalky palate with supple tannins and lively, refreshing acidity. The wine is juicy, structured and balanced, with hints of rosemary and thyme lingering on the juicy, soft finish.
Culinary recommendation
Ideal wine with beef stews, roast lamb or Italian dishes with sun-ripened tomatoes.
Vinification
Due to the uniform aging process, this Cabernet Sauvignon has an improved tannin structure. The grapes come from the Helderberg area near Stellenbosch. Cabernet Sauvignon is far less exposed to warm daytime temperatures and therefore ripens relatively late. In addition, we used a small percentage of Cabernet Franc, which gives Porcupine Ridge a nice fruit character, silkier texture and a subtle scent. The wine aged in French oak barrels for 9 months, resulting in more complexity and structure.
