About the wine
This high-quality Méthode Cap Classique sparkling wine bears its name in honor of Desiderius Pongrácz. Desiderius was a nobleman and refugee from the Hungarian Uprising, which had a great influence on viticulture in South Africa. He was an innovator and visionary, his theories were fresh and provocative.

Tasting note
It seduces with its rich complexity and a slight green tinge and a lively mousseaux. Nuances of fresh fruit, almonds and rich sandwiches delight the senses.

It is ideal with raw fish such as sashimi and oysters or as “solo” with an aperitif.
Vinification
Desiderius Pongrácz is made according to the proven French tradition of bottle fermentation and is a blend of Chardonnay (70%) and Pinot Noir (30%) grapes, which are picked by hand from two selected vineyard blocks. The wine aged on fine yeast for four months before being bottled for a slow second fermentation, creating the beautiful, elegant bubbles and brioche-like taste. The rich complexity and classic yeast character of MCC are created over time as a result of prolonged aging on yeast for over 7 years. The combination of fresh fruit, lively mousseaux, almonds and rich sandwiches is a treat for the senses.
