Tasting note
The color is dark and intense for a Pinot Noir. On the palate, it is silky with soft tannins, which are underlined by cherry notes, black currants and grilled spices.
Culinary recommendation
Perfect with duck breast with apricots, veal stew with vegetables, grilled steak with mushrooms and peppers or pork dishes.
Vinification
The estate clears the east side of each row and regularly carries out a “green harvest” to promote the ripeness of the grapes and to control production. Only the best grapes are harvested. Fermentation begins after several weeks of cold maceration in steel tanks. During fermentation, at the winemaker's discretion, the juice is gently squeezed out every day. Malolactic fermentation takes place in spring after harvest. Before bottling, the wine is filtered very gently.
