Tasting note
Sparkling cherry red. On the nose, various berries, sweet and spicy. Balanced and elegant on the palate, with a typical “Alsatian” freshness. Cherries, fresh raspberries, some pepper, mineral, with a touch of vanilla. Apart from a tiny dose of SO2 the day before bottling, no other ingredients are used. It wasn't filtered, just clarified.
Culinary recommendation
Goes well with game dishes, grilled foods, quiches, charcuterie, tomato-based dishes and mild cheeses.
Vinification
The grapes are picked by hand to ensure the highest quality. After a 10-day maceration, the aging takes place in barriques for 10 months. The wine is not filtered, but simply clarified to preserve its authenticity and expressiveness.
