Tasting note
Very straight and dry sparkling wine made from 100% Pinot Noir.
Culinary recommendation
Goes well with aperitifs, poultry terrines, finely seasoned but nutritious dishes such as veal breads in cream sauce.
Vinification
Half of the base wine made from 100% early-picked Pinot Noir is vinified in used barriques and half in steel. It stays on the yeast for more than 30 months after the second fermentation and is then corked with a small dosage of 2 g/liter.
