Tasting note
Fleuron is only produced in special years and is a clever combination of the most diverse terroirs that are representative of the vintage. The Grand Crus locations in Chouilly and Cramant account for a dominant share, but Cuis is now home and the essential feature of the “Pierre Gimonnet Style” and should therefore not be missed. A great vintage must be a wine that is primarily a pleasure; it must be a balance between concentration, refinement and elegance. In addition, the acidity of Cuis in particular gives a mineral freshness and gives this vintage cuvées its particular shelf life.
Culinary recommendation
Perfect as an aperitif and is just as delicious as an accompaniment to fine fish dishes, seafood or light starters. Its elegance and freshness go particularly well with oysters, scallops or a delicate citrus salad.
Vinification
The grapes for this champagne come from various locations on the Côte des Blancs, including Cramant Grand Cru, Chouilly Grand Cru and Cuis Premier Cru. After gentle pressing, fermentation and maturation take place in stainless steel tanks to preserve the freshness and purity of the fruit. The champagne is then aged on the lees for at least 78 months, giving it additional complexity and depth. The dosage is 5 g/l, which classifies it as Brut.
