Tasting note
This wine is a true expression of the terroir, characterized by elegance and depth, without bitterness. Its aromatic personality is free from sensory defects. With a straw yellow color and golden reflections, it reveals aromas of acacia flowers, yellow plums, melon and a hint of vanilla. On the palate, it is concentrated and full-bodied, yet with good freshness. The aftertaste is long and persistent
Culinary recommendation
Goes well with fish dishes, white meats and creamy cheeses. Thanks to its freshness and depth, it can also be enjoyed solo to appreciate its full aromatic complexity.
Vinification
This wine is carefully destemmed and crushed, followed by 48-hour cold maceration at 8°C. The alcoholic fermentation begins in steel tanks and ends in ceramic amphores and tonneaux. Malolactic fermentation is not carried out. The wine ages for 15 months on fine yeast in 500 l French oak barrels and 400 l ceramic amphores, with frequent bâtonnages. After a rest period of 4 months in the bottle, the result is a stylish wine.
