Tasting note
Pi Not Noir impresses with a wonderful aroma of ripe stone fruit, floral accents, a slight yeast note and a subtle hint of oak wood. On the palate, it is full-bodied, with lots of fruit, light roasted aromas and a racy acid structure. The aftertaste is long-lasting with a great fruity acidity. A very special representative of our region.

Vinification
The picture book vintage of 2015 prompted Siebe Dupf to create a new wine line, which should be a bit more modern, cheekier and simply different. For the first time, we aged a white wine in wood and pressed a red wine with dried grapes. Pi Not Noir and Rhy Passo (from the 2022 vintage, the wine is now called Rhy Serva) were born… The first vintage sold out within weeks and with the second vintage of 2016, slight adjustments were made during pressing and aging to give the wine even more finesse. Pi Not Noir consists of white-pressed Pinot Noir grapes from the best locations in our region. After careful handpicking, the grapes were immediately pressed in Liestal to produce a white wine from the Pinot Noir grapes. The fermentation and aging took place in three 400-liter oak barrels from Burgundy (30% new wood content) and a 900-liter Riesling fuder (1 year old). Pi Not Noir matures on full yeast for 11 months before it is peeled off, slightly filtered and bottled.
