Tasting note
The Pesus is very dark cherry red. On the nose, an aromatic potpourri of dark berries, ripe plums, cherry liqueur, sweet spices, sandalwood, coffee and herbs such as thyme and mint. On the palate, the wine is expressive and full-bodied with lots of dark fruit aromas, sweet-spicy accents, velvety tannins, elegant acidity and a noticeable minerality. A wine that, despite its richness of the palate, never appears overripe due to its elegance and terroir typicity and has immense aging potential. The trade press such as Robert Parker, WineSpectator or Guia Peñin almost always rates Pesus 95-100 points, and rightly so. It is undoubtedly one of the greatest wines in all of Spain!
Culinary recommendation
Goes well with festive dishes, Spanish specialties, barbecues, lamb, game, beef, ripe hard cheeses.
Vinification
The grapes for Pesus come from the Valdecarmen and Berical plots in La Horra at 830 meters above sea level. The vines, which are over 100 years old, are rooted in calcareous clay soil and are cultivated according to organic principles. During manual harvesting, the grapes are sorted in the vineyard and then again at the winery so that only the best grape material is used for the wine. After spontaneous fermentation, the wine is aged in new French barriques for 18 months. It is then bottled unfiltered and unembellished and continues to be stored in the bottle. The Pesus is only produced in the best years. (1200-2000 bottles annual production)
