Tasting note
Of a bright and vivid old pink color. In the glass, the fine rosé is presented with the finest perlage. The bouquet is lush and multi-faceted, reminiscent of cherries, hedroses and oranges. On the nose, this riserva looks almost more like a still wine than a spumante. On the palate, it has a rich and meaty structure, full and strong, but without losing balance. Long and digestible aftertaste, with notes of red fruits and gingerbread.
Culinary recommendation
Gives crunchy prawn skewers from the grill an extra twist, but with focaccia and salmon, it makes an equally nice pair.
Vinification
A normal start of spring 2013 was followed by an exceptionally rainy phase, which put the winegrowers' professionalism to the test. With the beginning of summer, the weather conditions stabilized and with the sun, optimism and joy returned to the vineyards. The vine shoot, as well as the flowering, began late, but then proceeded evenly and normally. The ripening phase of the grapes in August was slow, which suggested a medium-late harvest with increasing harvest volume, good grape health and excellent quality. This excellent sparkling wine ages on the lees for at least 5 years.
