About the wine
This wine is the symbol of the Negro family's historical connection with these areas. The company's flagship, Perdaudin, is produced in the vineyards of the old Podere di Audino. The maritime origin of the soil produces a nectar rich in mineral scents and typical of Roero wines.

Tasting note
Intense straw yellow color. Aromas of white flowers such as acacia and orange blossoms, with hints of pineapple and pear. In the mouth, it has a firm, solid and warm start, with a long finish and a pleasant mineral note.
Culinary recommendation
Goes well with fish dishes, white meats and medium-aged cheeses.
Vinification
The hand-picked Arneis grapes are pressed directly, without prior maceration. Alcoholic fermentation is temperature-controlled at 15-17°C in stainless steel tanks, deliberately avoiding malolactic fermentation in order to preserve freshness and fruit aromas. The wine is then aged for seven months on fine lees (“sur lies”) with regular bâtonnage, followed by a 12-month aging in the bottle.
