Tasting note
The nose reveals an intense red fruit. Wild berries, plums, red wine pears and strawberry compote. A very interesting nose, as the wine only smells of red fruits, but covers the entire spectrum here. Sweet and oily on the palate. However, this is balanced by great freshness and a supportive acidity. The finish is long-lasting and once again shows this balancing act between sweet and sour.
Culinary recommendation
Goes well with tapas, fish, Japanese cuisine and light meals.
Vinification
The Pandorga Tintilla de Rota is made from grapes dried in the sun. As the water in the grapes evaporates, the concentration of sugar rises. The grapes were harvested with a potential alcohol content of 11.5 vol. and had a potential alcohol content of 23.5 vol. after drying. With this high sugar content, the yeasts have to work extremely hard and the fermentation took place over 27 days until it stopped naturally at an alcohol content of 10.5% by volume and a residual sugar content of 220 g/l.
