Tasting note
The intense bouquet has balsamic and spicy notes, which are accompanied by berries, cherry, pepper and licorice. On the palate, Barolo Ornato shows structure and balance, softness as well as robust and elegant tannins. He is strong in character with a lot of elegance.
Culinary recommendation
Wonderful with beef — from steaks to stroganoff to tartare or slow-cooked roast from the oven. Wonderful accompaniment to all kinds of stews — whether it's lamb gigot, beef shoulder, roast pork or ossobuco.
Vinification
Manual harvest of Nebbiolo grapes. Slow fermentation (30 days) in steel tanks at a controlled temperature of 30°/32°C. After the Barolo has spent the winter in concrete tanks, it is aged in large French oak barrels for two years from the end of June. The aging process is then continued in the bottle for another year.
