The grapes were harvested by hand in 15 kg boxes early in the morning and refrigerated immediately upon arrival in the cellar to preserve their aromatic potential. After careful selection, the whole grapes were pressed slowly and gently, with particular attention paid to protection against oxidation. After static decantation, which took about 24 hours, the entire must was filled into 30% new and 70% used barrique barrels for alcoholic fermentation at a maximum temperature of 22°C. No malolactic fermentation was carried out. Yeast storage continued for 12 months with regular batonnage throughout the period and was completed in steel tanks for a further 3 months. Before bottling, the various base wines were assembled and a slight clarification was carried out. The wine was then aged in the bottle for a further 6 months before it was released on the market. “Ornellaia Bianco stands for the winery's will to express the exceptional characteristics of its terroir not only with red wines, but also with excellent white wine. This white wine is grown in north-facing Bellaria vineyards, on sandy and clay soils. The microclimate of Bolgheri in this area has a mitigating effect on the hot summer days and provides us with optimal conditions for maturation.
