Tasting note
Purple in the glass, Tierra Sur smells of black berries, violets and refreshing Ibizan herbs. Fruity and juicy on the palate, a treat of fruit and cocoa. Red fruits and violets with an unmistakable salty background. A perfect example of Mediterranean island wine!
Culinary recommendation
It goes well with grilled meat, Mediterranean tapas, spicy pasta dishes or aged cheese. It is also an excellent choice for paella, lamb dishes or hearty vegetable dishes. Ideal for sociable evenings with friends!
Vinification
Tierra Sur is grown in the northwest of the island at the Can Tonio winery, which is located on the slopes of the Els Amunts Mountains. The vines grow on terraces; the terroir consists of conglomerate, gravel and clay. Organic farming from the first vintage. Mash fermentation in small steel tanks, aging in French barriques for 12 months, without fining (no animal proteins) and unfiltered.
