Since 2015, musician and artist Dieter Meier has been transforming his impressions of the island into wines that reflect the terroir and the unique energy of Ibiza. Vinification
At the beginning of August, the grapes for the Ojo de Ibiza rosé are harvested and the grapes are stored in refrigerated chambers to preserve their true identity and freshness. When making wine, it is important to preserve the fineness of the aromas and the delicacy of the color. The whole berries are pressed directly, which is essential for the success of this wine. This juice is then subjected to cold fermentation and is constantly protected with gas to avoid loss of aromas.
