About the wine
Officium, the Latin name, is an homage to the duty and loyalty of squires. The label, with its simple and linear design, is an homage to the magnificent abbey tower and its surroundings, while the roots symbolize the bond between country and people. Finally, the golden color is reminiscent of the magnificent golden backgrounds of medieval miniatures and the reflection of sunlight on the shields of the knights and their squires when they finally reached this place of peace. The wine was rated 91 James Suckling points, 93 Wine Enthusiast points and 94 5StarWines - Vinitaly points. He also received the Silver Medal at the Concours Mondial de Bruxelles.
Tasting note
Ruby red color with garnet reflections. On the nose, it smells of spices, small red fruits, berries and scrub. juniper, humus, light nuances of flowers and hints of licorice and black pepper. On the palate, it is crisp and fresh, medium-bodied, with good acidity and well-integrated tannins. It finishes with balsamic and spicy notes.
Culinary recommendation
Goes well with red meat, pot roast, game, aged cheese and blue cheese.
Vinification
The grapes are destemmed and lightly squeezed to open the berries, then they are placed in steel tanks for fermentation, which have no more than two thirds of their capacity. Fermentation takes place with selected yeasts for about 12-15 days at an initial temperature of 18°C to 27°C. This is followed by a maceration period of around 20 days at 28-30°C. To help the extraction of the noble substances from the skins, pumping and destemming is carried out.
