Tasting note
A single-varietal Chardonnay from Jérôme, aged in steel tanks and in wooden barrels. On the nose, aromas of citrus fruits, white peaches, orange chutney and carambola, plus fine mineral-spicy chalk notes and some fresh ginger. Yellow plum notes on the palate, again spicy, with a good acid structure and a finely salty finish.
Culinary recommendation
Goes well with various fish dishes and seafood, such as cod fillet with Noilly Prat sauce, fried scallops on orange saffron broth or avocado smoked eel tartare.
