Tasting note
The grapes for this single-varietal Pinot Noir come from two individual vineyards. One in Châtillon-sur-Marne, “La Fontinette” planted in 1998 and the other in Cuchery, “l'Olivière” planted in 1990. The nose shows aromas of berries, dark cherries, nectarines, a touch of plums and freshly baked apple tart, framed with notes of violets, some light nougat and a fine saffron touch. Juicy, full-bodied palate, with inviting fruit, good freshness and a subtle tannin structure reminiscent of delicately tart cocoa powder. ONLY 1500 BOTTLES PRODUCED!
Culinary recommendation
Goes well with a variety of dishes, including fish and seafood as well as poultry and white meat, such as fried quail in cranberry cream sauce or oven-baked veal with black olives and apple sauce.
