Nastergal is dominated by Tempranillo, a Spanish grape variety known for making big, powerful wines. Tempranillo is sourced from slate soils that grow along the Berg River in Wellington, which offers plenty of backbone and aging potential To balance the strength of Tempranillo, it is blended with ripe Alicante Bouschet grapes, which are rooted in the deep red soils of the Stellenbosch Mountains and contribute spicy aromas and intense color. Small plots of Touriga Nacional, Souzão and Touriga Francesa, also from the Stellenbosch Mountains, round off this unique wine. The various grape varieties are fermented separately in open fermenters, with a small portion as a whole bunch of grapes. After pressing, the wine is aged for 11 months in used French oak barrels.
