Tasting note
An aromatic bouquet of quince and pear unfolds. On the nose, there are aromas of white fruits, accompanied by hints of hazelnuts. The palate is characterized by spices and a touch of light wood, accompanied by refreshing acidity and impressive length.
Vinification
Chenin Blanc is grown near the famous Loire castles. This Loire flagship wine shows aristocratic grandeur. The vines grow on clay and flint soils that lie on a mighty limestone plateau (tuffeau) above the Cher River. Thanks to the mild autumn season, the grapes can be harvested at perfect ripeness. Around two thirds of the grape juice is processed in tanks at cool temperatures of 13-16°C, while the remaining third is fermented in oak barrels. This fermentation process extends well into winter, occasionally even into spring. Fermentation ends naturally as soon as the optimal balance between sugar and acid is achieved. The wine is then aged in stainless steel tanks for six months.
