Tasting note
The grapes come from almost 50-year-old Cabernet Franc vines grown on soils that resemble a coal mine, hence the name. Aged for 24 months in barriques. Spicy fruity nose with aromas of dark berries, dried cherries and some cassis, plus notes of undergrowth, pepper, smoked bacon and black truffle. On the palate, on the other hand, a nice mix of juicy, fresh fruit, spicy minerals and elegant tannin structure.
Culinary recommendation
Goes well with beetroot risotto with “olivet cendré” (cow's milk cheese in ash), bean stew with bacon or a juicy leg of lamb with herbs from the oven.
