About the wine
If we can offer something special for Christmas 2018, it is this dominant Cabernet Sauvignon 2013 — Merlot Reserve. Enchanting and sunny landscapes of the coastal region give us these grapes, from which the winemaker from the South African winery Vergelegen conjures up this red wine with refinement and experience. Flaschenpöstler culinary tip: This Cabernet Sauvignon is ideal to serve with pizza with mushrooms or ribeye steak.

Tasting note
Our Merlot comes from various vineyard blocks on the estate, which are rooted in old soils. Aromas of ripe plums interwoven with delicious chocolate and fine nutmeg notes with a velvety soft aftertaste.
Culinary recommendation
Serve it decanted with your favorite red meat, such as lamb lamb chops or a filet steak.
Vinification
The grapes were picked and sorted by hand, transferred to stainless steel tanks and cold soaked for 2 days for soft extraction. They were inoculated with 3 yeast strains. A combination of circulators was used for extraction (closed and open). Depending on the extraction site, over-pumping was stopped at various times during fermentation. The wine wine was left in contact with the skins after fermentation to manipulate tannins. The malolactic fermentation took place in stainless steel, after which the wines were aged in barrels — a combination of 225l and 300l barrels for a 12-month aging before they were blended and bottled.
