Tasting note
The Venica brothers have developed a real mastery in growing and pressing a wide variety of white varieties. Each of them - there are seven in total - stands as a school example of their typicity and varietal character. Venicas also grow some red varieties such as Refosco, Schiopettino and Merlot in just a few places/locations. Merlot Perilla is bottled as a type of “riserva” only in very good vintages. The grape selection is made from the oldest vines on the Perilla vineyard, resulting in a wine characterized by tension and concentration, a merl ot with the typical spicy and peppery breed and a soft, almost flattering fullness on the palate.
Culinary recommendation
Von den Flaschenpöstlern empfohlen: Merlot Perilla DOC harmoniert ausgezeichnet mit Ente, Geflügel und leicht scharfem, rotem Fleisch. Im folgenden Zeitraum liegt die empfohlene Genussphase dieses Weins: Bis 2022.
Vinification
Ein paar Worte zur Vinifikation: Die Gebrüder Venica haben eine echte Meisterschaft im Anbau und in der Kelterung einer Vielzahl weisser Sorten entwickelt. Jede von ihnen - es sind insgesamt sieben - steht als Schulbeispiel für deren Typizität und Sortencharakter. Seit ein paar wenigen Jahrgängen stellen sie auch bei den Roten ihr Können unter Beweis: Zum einen ist es die Folge guter Jahrgänge, dann aber nimmt auch das Alter ihrer roten Reben langsam zu und damit die Konzentration der Trauben. Aus der Lage Perilla stammt die gleichnamige Cuvée, ein Merlot von beträchtlichen Ausmassen.
