About the wine
Pure elegance. Like a stroll in the castle park with aromas of pine, rosemary and juniper. Gently enveloping like a ruby red silk scarf. Balanced and very fresh, ideal for Mediterranean cuisine.

Tasting note
It appears in a deep ruby red. On the nose, intense aromas of ripe cherries, plums and wild berries develop, accompanied by fine spicy notes and a hint of cocoa. On the palate, it is smooth and elegant with soft, well-integrated tannins, a harmonious structure and pleasant freshness. Long, fruity aftertaste.
Culinary recommendation
It goes well with braised rabbit, guinea fowl, chicken or goose and cooked meat in general. Just as tempting with Grado-style fish stew, high-fat fish or spicy tomato-based fish soups and even braised eel.
Vinification
The grapes are carefully picked by hand and carefully processed. After temperature-controlled fermentation in stainless steel tanks, malolactic fermentation takes place to round out the tannins and give the wine a softer structure. Merlot is then aged in wooden barrels for several months, giving it complexity and depth before it is bottled.
