Tasting note
The Ernie Els Major Series Merlot is an absolute picture-perfect Merlot! Its seductive bouquet of ripe plums and fine earthy tones engulfs the nose with complex notes of ripe strawberries, moist forest soil, a touch of chocolate, black wild berries and fine caramel oak spice. The hearty palate is lined with sweet oak wood nuances, which are perfectly rounded off by a subtle saline touch. For medium palates, this highly endowed Merlot has a pleasant freshness and a balanced level of acidity, which provides a clean finish that lasts a long time.
Culinary recommendation
It goes very well with grilled or braised dark meat.
Vinification
The Merlot vines grow on the warm, north-facing slopes of the Helderberg region within the Stellenbosch appellation. With an altitude of about 250 meters above sea level and the cooling influence of the Atlantic Ocean, this results in a beautiful phenolic maturity. The hand-picked grapes arrive at the winery in the morning. The grapes are sorted and destemmed. The whole grapes are fermented both in open tanks and in barrels. Intermittent pumping and punch-downs ensure a balance between taste, color and tannin extraction from the skins. The fermentation process is closely monitored to ensure that all natural aromas and flavors are retained and highlighted as needed. After primary fermentation, a few batches are left on the skins to prolong maceration as needed. The batches are pressed and converted into a combination of old and new oak for maturation. Each batch of Merlot is aged (microvinified) separately in oak barrels before being assembled and finally bottled. The wine spent a total of 16 months in French oak barrels.
