About the wine
This name is located in the north of the Jura wine-growing region in France. It was the first French territory to be classified in 1936 and is the largest in the region. The vineyards cover around 900 hectares of vineyards in 12 municipalities. Pupillin is the only municipality that can use the name on its label.

Culinary recommendation
Goes well with cream cheese, pasta with fish sauce, fish in general.
Vinification
This rare white grape is part of the same family as Chardonnay. The ripe grapes shimmer golden yellow, sometimes with a delicate shade of pink — and produce a white wine of remarkable finesse. On the palate, it often shows exotic notes, citrus fruit and distinctive minerality. The grapes are completely destemmed and fermented exclusively with wild, vineyard yeasts. The wine is then aged in barrels on fine yeast for 12 months — until bottling. The name “Cuvée des Docteurs” is a tribute to the medical students who helped winemaker Lucien Aviet with the harvest in the early years.
