About the wine
Information from Roland Krebs: -Hand harvesting in boxes of around 14kg, selection of grapes directly in the vineyard. Ageing in steel tanks, spontaneous fermentation for three weeks, showered two to three times a day (with or without air, as required), aging on fine yeast for three months, monthly removals and then removal of the yeast, addition of sulfite in the smallest possible quantities, total so2 in the finished wine around 35 mg/liter, bottled in June 2016.
