Tasting note
Dark berry aromas, fine fruit and violet notes, underlined with some leather and dried culinary herbs. Silky, dry palate and showing strength. Fine tannin, elegant and aromatic right up to the end.
Culinary recommendation
Wonderful with beef — from steaks to stroganoff to tartare or slow-cooked roast from the oven. Excellent with mature hard cheese — from Parmigiano Reggiano to Sbrinz to pecorino or older alpine cheese.
Vinification
Short mash contact time of just 3 to 5 days. Fermentation and aging take place in stainless steel tanks.
